Tabbouleh salad is a traditional dish that can be found in many countries in the eastern Mediterranean region. The bulgur wheat is a precooked, dry wheat that is reconstituted in boiling water and then mixed with a lot of garnishes, especially parsley. In fact, it is often called a parsley salad. It can be made ahead as the flavors develop and improve if it sits for an hour or two. A great summer salad.
