Ingredients
- 1 large ripe, but firm tomato, about 12 ounces
- Fine sea salt
- Extra virgin olive oil
- Freshly ground black pepper
- 2 teaspoons chopped chives, flat-leaf parsley or basil
Method
- Remove the tomato stem and trim the opposite end so the tomato will sit flat. Slice the tomato in half, horizontally. Season the cut sides with salt. Heat 1 tablespoon of oil in a small sauté pan over medium-high heat. Put the tomato in the pan, cut side down, cover and cook until softened, about 2 minutes. Transfer the tomatoes, cut side up onto a plate, drizzle with the pan juices, sprinkle with pepper, garnish with the chives and drizzle with a little more olive oil.
A great side for breakfast, lunch or dinner next to bacon, vegetables, chicken or steak. Simple and elegant!
