Sweet Potato and Scallion Saute
Ingredients
- 1 (6 to 8 ounce) sweet potato, ends trimmed and peeled
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 scallions, chopped
- Fine sea salt
- Freshly ground black pepper
- 2 teaspoons maple syrup
- 2 teaspoons chopped chives, for garnish
Method
- Grate the sweet potato on the large holes on a box grater.
- Heat the oil and butter in a large sauté pan over medium-high heat. Add the grated sweet potato, pressing lightly to evenly fill the bottom of the pan. Top with the scallions, season with salt and pepper and stir to combine. Cover and cook until tender and beginning to brown slightly, about 5 minutes. Drizzle with the maple syrup, stirring well. Transfer to a small platter, sprinkle with the chives and serve.
I often roast sweet potatoes in the oven and add honey for sweetness. Sometimes, I like to grate them for quicker cooking and sauté them on the stovetop instead. A drizzle of maple syrup gives just the right amount of sweetness.
