Simple, quick and crispy, these fritters are made with a beer batter in minutes. If you want to make 4 slightly smaller fritters, use ¼ cup measure for each pancake.

Apple Fritters

If you use ¼ cup for each pancake, the pancakes will be slightly smaller, but the recipe will yield 4.

Ingredients

  • ½ cup all-purpose flour
  • ½ cup beer
  • 1 large apple, peeled, cored and coarsely chopped
  • ⅓ cup peanut oil
  • Granulated or powdered sugar, for dusting

Method

  1. In a medium bowl, use a whisk to mix the flour with just enough of the beer to make a thick paste, then add the remaining beer and mix well to make a smooth batter the consistency of heavy cream. Add the apples and mix well to coat.
  2. In a large sauté pan, heat the oil over medium-high heat. Once hot, add about ⅓ cup of the apple mixture, pressing it down into the pan. Repeat with more of the apple mixture, but because the mixture spreads, the size of the pan will dictate the number of fritters that will fit. Cook until golden brown, about 3 minutes on each side. Transfer to a cooling rack sitting on a baking sheet and sprinkle with sugar. Serve immediately while still warm.
