Caribbean Spicy Chicken and Mango Stir-Fry
Ingredients
For the Stir-Fry
- 1 pound skinless, boneless chicken thigh or breast, cut into ¾-inch cubes
- 1 tablespoon minced ginger
- 2 teaspoons soy sauce
- ½ teaspoon cornstarch
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon grapeseed or vegetable oil
For the Sauce
- 3 tablespoons mango chutney
- 2 teaspoons to 3 tablespoons sriracha
- 2 teaspoons dark soy sauce
- 1 teaspoon plus 2 tablespoons grapeseed or vegetable oil
- 1 large red bell pepper cut into 1-inch chunks
- 3 scallions, chopped
- 1 Ataulfo mango, cut into bite-sized slices
Method
- In a medium bowl, combine the chicken, ginger, soy sauce, cornstarch, salt and pepper. Stir until the ginger is distributed and the cornstarch is no longer visible. Stir in the teaspoon of oil. In a small bowl, combine the mango chutney, Sriracha and dark soy sauce.
- Heat a 14-inch, flat-bottomed wok or 12-inch skillet over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon of the oil and add the chicken, spreading it evenly in one layer in the wok. Cook it undisturbed for 1 minute, letting the chicken begin to sear. Then, using a metal spatula, stir-fry for 1 minute, or until the chicken is browned on all sides but not cooked through. Swirl in the remaining 1 tablespoon oil around the edge of the pan. Add the bell peppers and scallions and stir-fry for 30 seconds. Add the sauce mixture and stir-fry 1 to 2 minutes or until the chicken is just cooked through and vegetables are tender-crisp. Remove from the heat and very gently stir in the fresh mango slices. Serve immediately with rice.
When stir-frying, always use oil with a high smoking point such as grapeseed, peanut or canola. If you like mild heat, use as little as 2 teaspoons of Sriracha, but if you like spicy food, increase the Sriracha to 2 tablespoons. Ataulfo, or Champagne, mangoes are fragrant, silky and creamy in texture with an intense mango taste. They add texture and a fresh bite to this healthy, delicious and fast dish.
