I love the flavor of peas with mint and puréeing them together makes a great, versatile vegetable side dish that can be made ahead. Serve them with fish and chips, roast lamb or beef.

Purée of Peas with Mint

Ingredients

  • 16 ounces frozen baby or petit peas
  • 7 to 8 mint leaves
  • Pinch salt
  • Pinch freshly ground black pepper
  • 4 tablespoons unsalted butter
  • Sprig of mint or basil, for garnish

Method

  1. Bring a medium saucepan of water to a boil over high heat. Add the peas and return to a boil and cook until tender, about 3 minutes. Reserve ⅓ cup of the pea cooking water before draining the peas and immediately adding them into the jug of a blender or food processor. Add the mint leaves, salt, pepper, butter and the reserved cooking water and process until smooth. Taste and adjust the seasoning, then garnish with a sprig of mint or basil before serving.
