Roasted Salmon with Zucchini and Basil Butter
Ingredients
- 1 zucchini, about 6 ounces, cut into julienne
- Fine sea salt
- Freshly ground black pepper
- 2 salmon filets, about 6 ounces
- Extra virgin olive oil
- ¾ cup basil leaves
- 3 tablespoons unsalted butter, softened
Method
- Preheat oven to 350°F. Line a small baking sheet with aluminum foil.
- Sprinkle the zucchini with salt and pepper and spread on the lined baking sheet. Season the salmon filets with salt and pepper and set on top of the zucchini. Drizzle with about 1 tablespoon of olive oil and bake until the salmon is just cooked through or to your liking, about 12 minutes.
- In the bowl of a small food processor, combine the basil leaves, butter, salt, pepper, and a dash of olive oil and process until smooth. Transfer to a small bowl.
- To serve, transfer the salmon to a large, warm plate and spread the zucchini on top and around the salmon. Spoon some of the basil butter on the salmon and serve the rest on the side.
This one pan dinner couldn’t be simpler. While the salmon and zucchini bake, I combine the ingredients for the basil butter in a food processor, and then spoon it on top while everything is hot. Any extra basil butter can be brought to the table or reserved for another use.
