Inspired by the crisp wit of Dorothy Parker, this refreshing Collins is meant to highlight the floral notes of the rose petal gin that bears the writer’s name. I added a touch of cinnamon for depth and a hibiscus float for a colorful pop. I like to use In Pursuit of Tea’s Scarlet Glow for its fruity blend of hibiscus, lemon verbena and linden.

Smart Set Cocktail

Ingredients

  • ¾ ounce freshly squeezed lemon juice
  • ½ ounce cinnamon syrup, recipe follows
  • 2 ounces New York Distilling Co. Dorothy Parker rose petal infused gin
  • 2 ounces club soda, or more
  • 3 thin slices lemon
  • ½ ounce hibiscus tea, such as In Pursuit of Tea Scarlet Glow, chilled

Method

  1. In the cup of a cocktail shaker, combine the lemon juice, cinnamon syrup and gin. Add ice and shake well. Fill a Collins glass with ice and add half of the club soda. (The bubbles help mix the drink again once it hits the glass.) Strain the shaken cocktail into the glass; then top with enough club soda to fill. Garnish with the lemon slices, pressing them between the ice and the glass. Finish with the float of hibiscus tea. Serve immediately.

For the Cinnamon Syrup

Ingredients

  • 2 cups sugar
  • 1 cup warm water
  • 4 cinnamon sticks

Method

  1. In a small saucepan, combine the sugar and water, stirring until the sugar has dissolved, and bring to a boil over medium heat. Add the cinnamon sticks, turn off the heat, cover and let sit overnight. Next day, strain the syrup through a fine mesh strainer and pour into a glass container with a tight-fitting lid. Store in the refrigerator for up to one month.
