Ingredients
- 3 cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 ¼ cup milk
- 1 egg
Method
- Preheat the oven to 425°F. Line a baking sheet pan with non-stick foil.
- In a large bowl combine the flour, baking powder and salt; add the milk and egg and mix well with a wooden spoon. When the dough comes together, transfer it to the lined pan. With wet hands, mold the dough into a round loaf about 7-8 inches in diameter.
- Sprinkle with a teaspoon of flour and, using a serrated knife, cut a cross on the top of the loaf.
- Cover the loaf with an inverted stainless-steel bowl and bake in the oven for 30 minutes. Remove the bowl and continue to cook for another 30 minutes.
- Cool on a wire rack for 30 minutes before slicing.
I always like to have bread with dinner. When I find myself without any, I often make soda bread. I set my oven at 425°F, and it takes longer for the oven to heat up than it does to prepare the bread for baking. It is a simple mixture of flour, baking powder, salt, egg, and some milk. Mix it together and cook it in the oven, covered with a metal bowl for the first 30 minutes, and then another 30 minutes without it.
