Sweet Potatoes Glazed in Honey and Butter
Ingredients
- 1 cup water
- 1 (6 to 8 ounce) sweet potato, ends trimmed and peeled
- 2 tablespoons unsalted butter
- Fine sea salt
- 1 to 2 tablespoons honey
- Dash sriracha or other hot sauce
- 2 teaspoons chopped chives, for garnish
Method
- Bring the water to a simmer in a large nonstick sauté pan. Cut the sweet potato into 4 rounds of even thickness. Add to the simmering water, cover and cook until tender, about 5 minutes. Using a lid to keep the potatoes in the pan, carefully pour the remaining water in the pan into the sink.
- Return the pan with the sweet potatoes to the heat. Add the butter, season the potatoes with salt and drizzle the honey and sriracha over the top. Continue to cook, turning once or twice to coat in the glaze, about 3 minutes. Transfer the sweet potato rounds to a small platter and pour the glaze evenly over the top. Sprinkle with the chives and serve.
I love sweet potatoes with honey and butter. Cutting the sweet potato into rounds, steaming and finishing with a butter, honey and sriracha glaze in the same pan makes this a much quicker option than roasting.
